• 1 medium onion, chopped
• 3 green onions, chopped
• 1 poblano pepper, chopped
• 3 garlic cloves, chopped
• 3 Tbsp All You Can Spice™ Jamaican Jerk Seasoning
• 1 tsp salt
• 1/2 cup soy sauce
• 3 Tbsp olive oil
• 3 lbs chicken thighs
• Fresh pineapple slices
1. In a blender, combine the onion, green onions, garlic, poblano pepper, and All You Can Spice™ Jamaican Jerk Seasoning. Pulse the ingredients into a paste. Next add the soy sauce and the oil and blend until well-mixed. Add the chicken to a shallow dish and pour the marinade on top, flipping the chicken to get every side coated. Cover and refrigerate overnight.
2. Bring the chicken to room temperature. Set the grill to medium-high heat, and lower it as needed once you put the chicken on. Once all of the thighs are on, put all of the marinade on top of them. Turn the chicken occasionally, until well browned and cooked through, about 12 minutes each side. Transfer to a platter. Grill fresh pineapple slices for around 1 minute on each side. Serve grilled pineapple slices underneath chicken thighs to get that sweet, juicy, tropical flavor.
Tip: Turn leftover chicken and pineapple into tacos for a second meal! Add some guacamole and a sweet apple slaw. Yum!
