Jamaican Salmon with Mango Salsa

Salsa ingredients:
• 1 mango, chopped
• 1 avocado, chopped
• 1 jalapeno, seeded and minced
• 1 cup chopped red bell pepper
• 1/2 cup cilantro, chopped
• 1 Tbsp lime juice
• Salt to taste


Fish ingredients:
• 1 Tbsp extra-virgin olive oil
• 2 skinless salmon fillets (6 to 8 ounces each), about 1 in thick
• 1 Tbsp All You Can Spice™ Jamaican Jerk Seasoning
• Salt to taste

 

Directions:

Salsa:
Combine all salsa ingredients in a bowl. Gently stir, salt to taste, adjust as needed. Cover and refrigerate for 2 hours.


Fish:
Grease the grill and preheat to medium heat. Rinse the fish under cold water and pat dry with paper towels. Brush both sides of the fish with the olive oil. Rub in the Jamaican Jerk seasoning on both sides with your hands. Grill the fish for about 10 minutes, turning once. Test it's readiness by pulling at it with a fork. Serve on a plate next to a heap of mango salsa.


Tip: Salmon and Jamaican Jerk compliment each other, but you can use this seasoning on many types of fish. Sprinkle some on a few skinless trout fillets and fry them in a pan with some butter. Delicious!
